Apart from being rather grubby, the carburetters are not in bad shape.
One has a wrong size O-ring, and the screw heads have been abused. But the needles are in good condition and so are all other major parts.
I've decided to replace all the screws, washers, O rings, filters and drain plugs.
The rest should clean up ok.
I'm ordering all replacement parts from Hitchcock's Motorcycles - they have an easy on-line ordering system and all the parts I need.

I admire your get up & go spirit, regarding your rebuild. I too have a `69 bonnie that i am rebuilding, but mine has taken me two & a half years so far, & a long way to go yet!. I have had the bike for 34 years, but had a bad crash in `92, & the bike has been off the road since. I hope to finish it next year!. You make interesting reading.
